Cake School

For this post I am going to take you back in time to Christmas 2015.

First Christmas with a baby (3 months old). What would I like as a gift from Simon?

As much as I loved Max (and still do), I was desperate to feel a bit like “me” again. To just have a little bit of time where I wasn’t constantly thinking about feeding and changing and naps.¬†I had been interested in cake decorating for some time, ¬†learning everything from magazines and the internet. However, I quite fancied having some proper lessons. The shop where I bought most of my cake decorating supplies ran classes so I had a little look. Plus, going to cake school would mean a couple of hours to myself to focus on something else.

I decided to try the Cupcake Decorating Course from Confection Perfection in Maidstone (recently relocated to Bearsted). It was a 4 week course, 2 hours every Monday evening.

The day of the first class arrived. Simon came home from work and took over baby duties while I headed over to the cake school.

It was fantastic!!! We met our teacher, Sam, and quickly got to work. She demonstrated how to make the cupcakes and then we all made our first batch of 6 and got them in the oven. While they were cooking we got started making some pretty decorations. Naturally, there were a few spare cupcakes that we got to “test” and they were delicious. We then decorated our first 3 cupcakes with some piped roses, whippy swirls and our flower paste decorations.

I checked my phone quite a lot to make sure the boys were ok. I hadn’t left Max for very long before so I was a bit nervous. Needless to say, they were absolutely fine and Simon was delighted to have a cupcake treat when I got home.

The second class we learnt some new decorating techniques and piped some beautiful flowers. I also managed to check my phone a little bit less! I was really enjoying being able to just switch off and relax for a couple of hours (although it is quite stressful when you can’t get your flower paste rose out of the mould without the leaves falling off).

Third class was baking time again. This time double chocolate cupcakes which were lush!!! We piped some stars and rosettes on these and also learnt how to make animal print toppers.

The fourth and final class came around far too quickly. We made some little faces and ladybirds out of sugar paste for our last 3 cupcakes.

What was I going to do with my Monday evenings now????

I decided I wanted to keep it as “me time”, even if I just went to a coffee shop for a couple of hours. Simon agreed, but a few days later he had a surprise for me…he had booked me another course and this time it was 6 weeks!!!Yay!!!

I have to say, the classes at Confection Perfection are amazing. Sam was more than happy to answer any questions about cake baking and decorating, even if not cupcake related. Plus you get so many little tips and tricks which you just can’t get from the magazines. I would highly recommend them.
